Veggie Forward BBQ Bibimbap Bowl


  • Cutting Vedge Veggie Forward Meatballs
  • Half of one carrots, cut into matchsticks
  • Half of one zucchini, cut into matchsticks
  • ½ cup of shiitake mushrooms, sliced
  • ¼ cup of bean sprouts
  • Half of avocado, sliced
  • ¼ cup of kimchi
  • 1 tbsp soy sauce
  • 1 tbsp Sriracha
  • 2 tbsp sesame oil
  • Sesame seeds, to serve
  • 1 cup water
  • 1 cup sushi rice
  • 1 pinch salt


  1. Cook Cutting Vedge Meatballs according to package Instructions 
  2. Cook rice according to package instructions in a rice cooker.
  3. Saute mushrooms in a pan with 1 tsp sesame oil and 1 tsp soy sauce for 1-2 min on high heat. 
  4. Heat 1 tbsp sesame oil over medium-high heat, then cook meatballs for 2-3 min. Remove from the pan.
  5. Add a bit of rice to a bowl. Picking out veggies one at a time, place each in a circle around the bowl, then add kimchi and cooked meatballs. Sprinkle a bowl with sesame seeds and serve.
