Polenta Burgers

Ingredients

  • 3 Cutting Vedge Veggie Forward Burgers
  • 1 tomato, sliced
  • 3 handfuls of baby arugula
  • 1/4 red onion, sliced

Secret burger sauce
  • 3.7 oz vegan mayo (100g)
  • 1 oz ketchup (25g)
  • 4 tsp pickle juice (or chopped pickles for a chunky sauce)
  • 2 tsp sweet mustard
  • 1/2 tsp liquid smoke
  • 1 tsp of each apple cider vinegar, onion and garlic powder, white pepper

Polenta buns

  • 33.8 fl oz of filtered water (1 liter)
  • 1 tbsp paste of vegetable bouillon
  • 8.9 oz cornmeal (250g)
  • 1.7 oz vegan parmesan (50g)
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp EVOO

Directions

Prepare polenta buns:
  1. Brush the inside of a 9×13 baking dish with 1 tbsp of extra-virgin olive oil.
  2. Preheat the oven to 400°F (200°C).
  3. Add the water with vegetable bouillon paste to a large saucepan over medium heat. Once warmed, slowly pour in the cornmeal while whisking until combined. Bring to a boil, stirring often.
  4. Add seasoning and vegan parmesan, and whisk together. Reduce the heat to low and simmer uncovered, stirring occasionally, until thickened and smooth. The polenta should have a very thick consistency, like very thick oatmeal or mashed potato.
  5. Pour the polenta into the baking dish and bake in the preheated oven for 30 to 40 minutes. Take out of the oven and let the polenta cool in the fridge for around 30 minutes. Cut the polenta into circles that are 3.5 to 4 inches wide (or any other shape you’d like).
Prepare secret burger sauce:
  1. In a small bowl whisk together sauce ingredients until combined. Taste and adjust seasonings to taste, if needed. Let sit for at least 30 minutes to enhance flavors before serving.

Assemble burgers:

  1. Prepare Cutting Vedge Veggie Forward Burger patties following the package instructions. Then assemble the burgers starting with a polenta bun, followed by arugula, burger patty, tomato, onion, and burger sauce. Top with another polenta bun.
  2. Serve with your favorite sides, such as fries or salad, or enjoy on its own!
