Plant-Forward Meatball Gyros

Ingredients


Ingredients Topping:
  • 1 package Cutting Vedge™ Meatballs
  • 1/4 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, halved
  • 1/4 cup sliced red onion
Ingredients Tzatziki:
  • 1/3 cup vegan greek yogurt
  • 1 cup cucumber, grated, strained
  • 1 tbsp olive oil
  • 1 tbsp fresh dill
  • 1/2 tbsp lemon juice
  • Salt to taste
  • a small clove of garlic, minced

Directions

  1. Mix all the Tzatziki ingredients together in a small bowl.
  2. Next, cook Cutting Vedge™ Meatballs according to package directions. 
  3. While they are cooking, slice your cucumber and red onion. Half a handful of cherry tomatoes and greek olives.
  4. To assemble, spread a generous serving of hummus on each flatbread then top with Cutting Vedge™ Meatballs, cucumbers, onions, tomatoes, olives and tzatziki. Garnish with fresh parsley to serve.
