Patriotic Meatball Skewers


  • 2 packages Cutting Vedge™ Veggie Forward™ Meatballs
  • 1 cup Grape Tomatoes
  • 6 small Blue Fingerling Potatoes
  • 1 White Onion, diced
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper


  1. Add the blue fingerling potatoes to a pot, fill with salted water, cover and bring to a boil. Uncover and cook until fork tender. Add the roughly diced onion in for the last minute to cook slightly.
  2. Preheat oven/toaster oven to 400°F and bake Cutting Vedge™ Veggie Forward™ Meatballs on ungreased baking sheet for 10-12 minutes, until heated through and lightly browned.
  3. Thread the grape tomatoes, diced onion, sliced blue potatoes and Cutting Vedge™ Veggie Forward™ Meatballs onto skewers then place onto a serving platter. Drizzle with olive oil and season with salt and black pepper.
